“ICE CREAM KUPINO” FACTORY DAY-TO-DAY OPERATIONS
Everything starts with the acceptance of fresh milk which is brought to the Kupino factory. It is the most important quality control procedure. Milk is passed through a “nanofilter” - a modern fine filter. It allows to force the smallest particles which increases safety and improves control procedure. The milk passed through filter enters the tank and is cooled therein at a temperature of +5°C. After milk is filtered, a Chemical Engineer examines its fat content, acidity and microbiological parameters in the laboratory.
The laboratory is an additional milestone of a multi-stage control system. This is a barrier before releasing a quality product which allows us to identify risks and to respond in a timely manner. A Chemical Engineer must determine the fat content of milk using Lactoscan milk analyzer.
Filtration is used at every stage of manufacturing process in order to prevent any ingress of unwanted tiny particles into the product and not to spoil the product. We strive for every serving of ice cream released from our factory!
The finished mixture is not the final operation. It is homogenized to get a uniform consistency, and then it is pasteurized at high temperatures ranged from 90°C and above.
After gentle pasteurization, the chilled mixture is sent for maturation. A whole compartment of tanks allows not only to arrange the high quality maturation of the mixture to the desired condition, but also to store the mixture. To get the true flavor of creamy ice cream, no additives are added to delicately give the real taste of quality ice cream.
Before entering the freezer, the mixture is boiled and prepared; this can happen in different ways for different types of ice cream - both in terms of period time and in terms of the procedure. In one tank they stir clockwise, in the other tank — counterclockwise.
In the freezer the finished mixture is aerated, becomes saturated, turns into a treat and freezes. Air is supplied through a special air compressor with a filter from the world leader Tetra Pak. It is a surgical filter, everything is sterile. This is an integral part of the manufacturing process, so absence of safety control therein is unacceptable.
Specialists working on production lines constantly monitor every small detail of the released product: color, filling, glaze, label, packaging. Each product is passed through a metal detector - it is another important product safety control step.
